Interested in discovering the Ins and Outs of Local Food Resources, Proper Food Preparations, and Ingredient Sleuthing?

Join me as Heather Welsh leads us on a month long journey through the ins and outs of local food resources, proper food preparations, and ingredient sleuthing.  Each day we will discuss at least one food item or food group in depth and one ingredient often found in personal products.   This Food/Ingredient Intensive Facebook Course takes place on Augus 14, 2016 through September 16, 2016.

Don’t live in Atlanta?  No problem.  No matter where you live you will know what to look for and the questions to ask to locate local healthy food for you and your family.  When possible, Heather will provide online resources where you can obtain quality products that can’t be found locally at a great price.

The course will be taught nightly from 9-10 pm EST via Video, Posts, and Q&A, and occur in a private Facebook group. Using this medium will ensure that you will not miss anything because everything will be posted for everyone to see so if you are out a night or two you can easily catch up.

There will be two 2-hour conference calls.  And for those local to Atlanta, a trip to DeKalb Farmer’s Market, and to a local farmer’s market is included. Those in the class will select dates and times for the farmer’s market trips.  Course content will be interactive and will be dictated by the students with Heather’s guidnce.

Price Chapter Leader, offering Local Food Cooking and Fermentation Classes, and leading tours at several Pastured Based Farms in and around the Atlanta Area, she has developed a keen understanding and appreciation for quality food and the methods used to produce it.  Furthermore, her previous experience as a Sourcing Director for a local organic restaurant offers additional understanding to the importance of seasonality and what to be on the look-out for when dining out.

The Spice That Can Strengthen Your Brain

The Spice That Can Strengthen Your Brain

Turmeric, the golden-orange spice commonly used in curries, may play a role in enhancing the brain’s ability to build new cells—a process called neurogenesis—according to a group of German researchers from the Institute of Neuroscience and Medicine. The key appears to be a compound found in turmeric, aromatic turmerone, that previous studies have shown can reduce inflammation in the brain.

This most recent study expands aromatic turmerone’s benefits to include new cell growth. In fact, the compound was capable of enhancing neural stem cell growth in rats by as much as 80 percent, in some cases.

Study authors admit that, while their results underscore the potential brain benefits of turmeric, there’s still a long way to go before any science-backed argument for suggesting the spice as a therapy for those with conditions that kill brain cells, such as Alzheimer’s disease or stroke.

An ancient remedy

Turmeric contains another potentially beneficial component: curcumin.

The health advantages of curcumin are perhaps the world’s worst kept therapeutic secrets. The compound has been used for millennia by Indian, Middle Eastern and Asian cultures for a variety of purposes, from alleviating inflammation and other aches, to cooking, to ceremonial rituals.

More recently, scientific studies have identified curcumin—an antioxidant—as being potentially beneficial for people with arthritis, atherosclerosis, depression, different forms of cancer, dementia (including Alzheimer’s) and high cholesterol.

Despite these positive reviews, the formal evidence regarding curcumin and turmeric is not yet strong enough to warrant a formal dosage recommendation, but it certainly can’t hurt to use the tangy powder to spice up some of your dishes.

Since the amount of curcumin in turmeric is relatively small, try choosing a recipe that also contains black pepper and fat, two ingredients that can enhance the curcumin’s bioavailability—your body’s ability to absorb the compound—like this hearty, healthy breakfast scramble, perfect for a cool fall morning:

Spicy Scrambled Eggs with Leafy Greens

Ingredients

2 eggs
Salt and pepper
Dash of paprika
2 tsp turmeric
1 ½ cups of spinach or kale
1 tbsp coconut oil

Directions

  • Melt coconut oil in medium saucepan.
  • Add spinach/kale and cook until wilted.
  • In a separate bowl, combine eggs, salt and pepper, paprika and turmeric. Whisk vigorously.
  • Pour egg/spice mixture into saucepan and mix until greens and eggs are thoroughly cooked.
  • (People with sensitive taste buds can add a few ounces of feta cheese to cut the heat of the dish.)

21 Healthy Habits for 2014

 

What if we commit to starting healthy habits in 2014? Here are a few ideas to get you going!

I think the reason that so many of our New Year’s resolutions fizzle is that they’re just too vague, and that makes it hard to actually put them into action.  A resolution is really just a goal, though, right? What if this year you had a structured goal to help you incorporate healthy habits into your life?

A resolutions like “eat healthy food,” for example, is kind of tricky, isn’t it? What do we mean when we say “healthy food?” Did we fail if we break down and devour a box of cookies? Are we planning to ditch those cookies from day one? An open-ended goal like this can be overwhelming, but healthy habits are made to stick.

What are Healthy Habits?

Healthy habits can refer to physical or emotional health. A healthy habit is one that makes you feel good and feel good about yourself. It’s a big umbrella, and I think that it encompasses a lot of what we are going for when we declare those fleeting New Year’s resolutions.

Breaking unhealthy habits can also be part of starting healthy ones. Cutting back on sugar or soda are good examples of healthy habits that are really more about giving something up that’s harming your health.

Unlike a resolution a habit is something that you do (or don’t do) regularly. It’s part of your routine. Brushing your teeth is a habit and so is your morning cup of coffee, and neither of those feel like chores because they’re just part of your day. The trick to making healthy habits stick is repetition, and having a plan is key.

How to Start Healthy Habits

Starting healthy habits isn’t easy, and I think there are some keys to effectively starting one:

  • The goal you’re setting should be flexible. Don’t beat yourself up for setbacks. Instead, let yourself screw up sometimes and commit to getting it right the next time.
  • Choose something specific and attainable, and have a structure in place. Don’t just say “exercise more.” Tell yourself what you’re going to do and how often, like “walking for 45 minutes on Monday, Wednesday, and Friday mornings before work.”
  • Set short-term time limits. Monthly, weekly, and even quarterly check-ins can keep you on track. See where your healthy habits are strong and where you need to work a little harder. Maybe you’ve been great at eating more greens, but you’ve been eating a lot more cookies than is reasonable lately.
  • You need to commit to practicing your goal on a regular basis. We form healthy habits by repeating them over and over until they’re part of our day-to-day routine.

Healthy Habits for 2014

Instead of the typical New Year’s resolution, try starting one of these habits for physical or emotional health in 2014!

1. Happy Thoughts Jar – This might sound cheesy, but it’s actually really gratifying. Grab yourself a large jar, and every day write down something that makes you happy. Stick that scrap of paper in the jar, and when you’re feeling blue, you can sift through all of your happy thoughts from the year.

2. Green Smoothies – Instead of “eat healthier,” get specific and start your day off with a healthy green smoothie! My 40 Days of Green Smoothies book can help you get started, or you can find your own green smoothie recipes online.

3. Start a Daily Yoga Routine – Or commit to doing yoga on certain days of the week, if that seems more attainable to you. Check out these yoga poses for beginners to get you started.

4. Reduce Your Impact – “Go green” is a tough resolution to keep, but what if you resolved to start a few of these simple habits instead?

5. Switch to a Natural Deodorant – Don’t resolve to “get healthy.” Gets specific instead and ditch the toxic chemicals in your deodorant. Making the switch can be a little bit tricky, so check out these tips on how to make the switch a little less, well, stinky.

6. Ditch the Sodapop – Quitting your soda habit can go a long way towards getting healthier, and these tips can help you quit an unhealthy soda habit.

7. 13 Steps to a Better You – My friend Lisa at Lazy Budget Chef outlines her specific action plans for starting 13 healthy habits. You could follow one of these or pick a few for your New Year’s resolutions.

8. Ditch Plastic Food Storage – Talk about an unhealthy habit! Check out some tips on how to start using healthier glass to store your food.

9. Try Macrobiotic Eating – Healthy eating can seem elusive, but with some practice it’s totally doable. Jenny Bradford is starting a 30 day plan for macrobiotic eating, for example. Thirty days is a doable length of time, and at the end she’ll have developed some healthy habits without overwhelming herself.

10. Meatless Monday – Does going vegan or vegetarian seem elusive, but you’d like to try to eat less meat? Commit to going meatless for just one day a week! Your heart and many, many farm animals will thank you.

Healthy Habits: Cooking at Home

Cooking at home can save money, reduce waste, and help you eat healthier for the new year.

11. Cook at Home – Do you eat take out or delivery food for much of the week? Try starting a weekend cooking ritual to stock your fridge and freezer with home-cooked meals that you can eat all week long. If you’re overwhelmed by the whole idea of cooking, just get in there and get started! The more you cook, the easier it is to make your food at home.

12. Switch to a Standing Desk – Do you sit at a desk for 40 hours a week? It turns out that sitting is terrible for your health! Choosing a standing desk can help reverse the negative health effects of sitting all day, every day at the office. If standing all day seems like a lot, they also make convertible desks, so you can alternate. A friend of mine just switched to one of these, and she loves it!

13. Swap Your Desk Chair for a Yoga Ball – Does a standing or convertible desk seem like too much? Try using a yoga ball instead of a desk chair to improve posture and concentration while you work. Leesa recommends a stand up desk!

14. Ditch Sugar – This might seem a little bit daunting, but with a plan it’s attainable! The book The Sugar Detox looks like a good place to start with this healthy habit!

15. Go Vegan -Are you ready to take the plant-strong leap? Check out this complete guide to vegan cooking for beginners!

16. Meditate – Have you been wanting to try meditationThere’s an app for that, and it’s awesome. Leesa recommends Dahn Yoga!

17. Ride Your Bike to Work – You don’t have to ride your bike every day to be a bike commuter! Start with one day a week and go from there. Here are some bike commuting tips to get you started.

18. Ditch Bottled Water – It’s so convenient to grab a plastic bottle of water when you’re out and about. Start keeping a reusable bottle in your purse, car, and bike pannier so you don’t have to buy bottled water to stay hydrated.

19. Practice Gratitude – File this under “slowing down.” This healthy habit is all about taking a moment out of your day to appreciate even the mundane things in your life.

20. Learn Something New – Don’t just say that you’re going to learn something! Choose what you want to learn, and enroll in a class, so that you’re committed. Your local community college might be a good place for budget-friendly classes, or you can look for online classes if you need something that fits into your busy schedule.

21. Bust that Clutter – Just “get organized” can be a hard resolution to keep, but what if you break your unhealthy habit of storing clutter? Here are some clutter-busting tips to get you started.

4 Ways to Stop Feeling Scattered (& Reinvigorate Your Brain)
Thoughts pass in and out of our minds all day, but how many of them actually stick with us? How often do you take the opportunity to sit down and think about the beauty of life, the world, the universe, without any bells and whistles clogging your thought processes? The truth is, we are junkies for comfort and entertainment. We avoid nasty thoughts about insignificance, mundanity, or failure by getting jacked up on visual and audial Soma, whether it be Youtube cat videos or the latest Hollywood or political scandal. When you really think about it, do you allow yourself to truly think on a regular basis? In the modern age of Instagrams, tweets, and the 24 hour news cycle, how much do you really stop and contemplate? How often do you have creative thoughts or ideas? In this age of technology, you might not be as creative or mentally present as you once were. If you are stuck in a monotonous mental rut, experience these 4 things to reinvigorate your mind and spirit.

 

Expose yourself to art. Timeless novels, opulent operas, contemporary ballets — art is meant to make you think. It brings you on a journey into a state of empathy and consciousness you otherwise might never experience. Go to a museum, see a concert (no, a One Direction concert doesn’t count), read a classic novel. Immersing yourself in the creativity of others will help you to become more creative and open-minded in your own life.

Practice meditation. Whether you use visualization techniques or you release your mind during gentleyogameditation clears the garbage from your head and makes room for profound thought. Mindfulness in life can reduce stress, increase awareness, and make you a generally better person to be around. Think you don’t have time? If you have time to check your Facebook in the morning, you have time for 5-10 minutes of meditation.

Embrace silence. Don’t just turn the television on when you get home from work or spend your evening perusing other peoples’ Pinterest walls. Silence is a rare and beautiful thing. Cut the visual and audial pyrotechnics for a night and find out what you are drawn to. Perhaps you’ll enjoy your dinner a little bit more. Perhaps you’ll pick up that old tome you’ve always meant to read. Perhaps you’ll discover a new hobby entirely. Distractions discourage creativity, so shut down your electronics for the evening and get reacquainted with your unplugged self.

Be in nature. Go back to your roots. Literally, the roots in your backyard or nearest nature preserve. Sit under a tree and just be. Hear the birds chirping, notice that chipmunk absconding a squirrel’s nut stash, watch the stars develop at dusk. If you are a little more adventurous, take a trip into the wilderness and feel the bonds of constant societal distraction slide off your body. Don’t let winter stop you. Even a stroll through the park can put everything into perspective.

Why is it that we, as a general society, don’t think about things as deeply as we could? Is it because we have the Internet, so we foolishly think we know everything? Is it because we are driven to try to become more and more comfortable and the act of profound thought is sometimes harsh and distressing? With machines doing most of our tasks and thinking for us, we have to push away complacency and throw ourselves into the art of life. We live in a beautiful age in which we don’t need to spare thought for menial tasks, so let your creativity flourish and empower your mind with thought.

16 Lesser-Known Nutrients with Big Powers

 

Many of us are well aware of macronutrients, such as carbohydrates, protein  and fat, as well as micronutrients, such as the vitamins and minerals that are  listed on FDA-regulated food labels. But too few of us are familiar with  phytochemicals — plant-based micronutrients that offer many health benefits and  may help ward off chronic diseases, such as cancer, diabetes, heart  disease and stroke.

It’s a time-tested truth: Plant-based foods, such as fruits, vegetables,  legumes, whole grains, nuts  and seeds, are good for you. But researchers recently have discovered that plant  molecules connect with human cells in striking ways. In other words, we’ve known  they were good for you — just not this good.

“I don’t think there’s been this much excitement since vitamins and minerals  were discovered more than 100 years ago,” says Beverly Clevidence, PhD, the  research leader at the USDA-funded Food Components and Health Laboratory in  Beltsville, Md.

The discoveries — partly because of the work of the Human Genome Project — are revolutionizing the way we think about food.

In the past 20 years, for example, researchers have discovered that carrots, kale  and peanuts are not just plant tissues embedded with vitamins and minerals that  are easily encapsulated in multivitamins. Rather, these plant tissues are made  up of tens of thousands of phytochemicals (“phyto” is from the Greek phuton, meaning plant).

You’ve probably heard of a few phytochemicals without even knowing what they  are. For example, lycopene is a powerful phytonutrient found in tomatoes that  helps fight heart  disease and a variety of cancers. And the phenols found in  strawberries protect against cancer and autoimmune diseases, and help reverse  nerve-cell aging. But there are tens of thousands of other phytochemicals about  which most of us know nothing. Experts in the nutrition field are buzzing about  these chemicals with tongue-twisting names like glucoraphanin, zeaxanthin and  saponin.

Why Food Is Your Best Source

Eating a diet steeped in fruits, veggies, legumes and other plant-based foods  is the best way to ensure you’re getting all the phytonutrients your body needs.  While there are a growing number of phytonutrient supplements available, many  experts warn consumers away from that option.

The big cautionary tale here is beta-carotene. In 1995, it was considered the  ultimate panacea. “There was so much good research on beta-carotene,” says David  Williams, PhD, a researcher at the Linus Pauling Institute at Oregon State  University in Corvallis. “We were charting nice correlations between  beta-carotene in the blood and lower cancer risk. Basically everybody just  assumed that beta-carotene was chemo-protective.”

But to the shock of many in the scientific community, two major clinical  trials in 1996 indicated that beta-carotene supplements were not only useless  against cancer, but actually increased the risk of cancer in smokers.

“That was one of the first big disappointments, and it made people rethink  the idea of going after individual phytochemicals,” says Williams.

Mark Farnham, PhD, a plant geneticist who specializes in phytonutrient  research at a USDA facility in Charleston, S.C., concurs that current scientific  consensus is now leaning toward emphasizing whole foods, rather than  supplements, because plant chemicals seem to interact with one another in  powerful ways. “There seems to be a synergistic effect between the chemicals in  food,” he explains, noting also that this synergy is very hard to study because  plant-based whole foods contain so many different bioactive compounds that it  would be almost impossible to separate and study the potential health benefits  of individual phytochemicals.

Plus, each chemical seems to have its own quirks. The carote-noids in collard  greens, sweet potatoes and tomatoes, for example, are best absorbed if they are  chopped, puréed or cooked, and eaten with a little fat, such as olive  oil. But the glucosinolates found in cruciferous vegetables are most  effective when eaten in their raw state and thoroughly chewed, so the plant cell  walls release more of the cancer-fighting chemical. “There’s really no useful  rule, because they’re all unique,” says Clevidence.

So eat as many fruits, veggies and other plant-based foods as you can, and be  sure to choose foods from all around the color wheel — from ripe red tomatoes to  princely eggplant to vivid oranges.

“If on a daily basis you incorporate at least seven different colors, you are  much more likely to get a wide variety of these nutrients that are healing, that  prevent degenerative disease, and that will go to work on every tissue, cell and  organ of the body,” says nutritionist Ann Louise Gittleman, PhD, coauthor of The Fat Flush Plan (McGraw-Hill, 2002).

And don’t be afraid to go exotic with your color choices. Unusually hued  foods add intrigue to your plate, and researchers at Washington State University  have found that those foods can yield health benefits as well. Their 2006 study  showed that wildly colored spuds contained more phytonutrients than  white-fleshed potatoes.

If you need more motivation to eat your veggies, start a vegetable plot, and  then chow down on the fruits of your labor. A 1991 study published in the Journal of Nutrition Education found that vegetable gardeners ate  significantly more eggplant, sweet and hot peppers, summer squashes, tomatoes,  and herbs than did nongardeners.

It’s also a smart idea to avoid pesticide- and herbicide-drenched produce by  going organic. Last year, Bland completed a survey of some 50 organics-related  research reports and found that the vast majority of organic produce supported  higher levels of phytonutrients.

If vegetables don’t usually appeal to you, consider taking just one  vegetable-centered cooking class. It might make all the difference, according to  a 2005 study in the Journal of Nutrition Education and Behavior. After  all, what sounds better: Brussels sprouts, or roasted Brussels sprouts with pine nuts  and marjoram?

Ultimately, if your strategy for good health has been limited to popping  vitamins, consider what you’re missing: a smorgasbord of beneficial  phytonutrients found in wonderful, whole, plant-based foods. Besides, real food  has been through the most extensive laboratory experiment ever conducted — natural selection. There’s nothing that’s been proven to nourish our bodies  quite so well.

4 Countries With the Right Approach to Dementia Care

 

By the year 2050, 277 million aging adults are expected to be dependent on  others for personal care. Of those 277 million, approximately half will be  struggling with symptoms of dementia, according to the newly released World  Alzheimer’s Report 2013. (Discover the common signs  of dementia.)

“All governments should make dementia a priority,” according to the authors  of the report, which calls upon policymakers across the globe to “transform  their system of priorities” and infuse dementia research and support efforts  with a tenfold increase in funding.

These statements echo the pleas made over the years by countless individuals  and advocacy groups; a universal cry to address the threat of the “silver  tsunami” that looms ever larger in the world’s rear view mirror.

The report itself highlights many current caregiving issues that advocates  warn will only become more concerning as time goes on. Why are family  caregivers so undervalued? What factors force people to place their loved  one in a long-term care facility? How can we preserve the quality of life of  individuals with dementia and their caregivers?

Progress is being made to address each of these problems, with different  countries adopting different strategies to find a solution to the dementia  care crisis.

The United States joins eleven other countries (Norway, Australia,  Netherlands, Scotland, Denmark, Finland, England, Wales, France, Republic of  Korea and Northern Ireland) in releasing a formal plan to address Alzheimer’s  and other dementias in their respective domains.

Improving support (both financial and emotional) for those affected by  dementia, enhancing the quality of care provided by long-term care facilities  and reducing the overall costs associated with dementia top the lists of  priorities in these plans.

Similar aims, different approaches

The global community appears to agree on the overall goals of dementia care,  but a surprising number of differences in execution occur, depending on  geography and cultural practices.

“Different places are going to have different variations in care,” says Cathy  Greenblatt, PhD, author of Love, Loss and Laughter: Seeing Alzheimer’s  Differently. “But the same things that are important in Florida are important in  Bangalore.”

After watching her grandparents (both of whom had dementia) receive little  more than maintenance care in a local facility, Greenblatt acquired a dim view  of dementia care. “The people working with my grandparents had bought in to the  idea that they were ‘gone.’ I grew up with no evidence that any kind of care  could make a meaningful difference.”

After retiring from her professorial post at Rutgers University,  Greenblatt—inspired by her childhood experiences with her grandparents and a  budding passion for photography—crisscrossed the globe in search of examples of  high quality dementia care.

Despite the cultural disparities and ideological differences of the regions  Greenblatt visited there was one central theme that united them all. No matter  which country she found herself in—India, Japan, France, or the Dominican  Republic—Greenblatt discovered that the best dementia care practices were the  ones that focused on celebrating the ongoing humanity of the person with the  disease. “The things that make a difference are the things that are  universal—treating people with dignity, being in the moment,” she says.

Here are just a few examples of the ways different countries are infusing  dignity into dementia care:

India: Money is always a significant factor when caring for  someone with dementia, no matter what side of the Equator they live on. Having  fewer finances often amplifies the burden of dementia on a person and their  family. But low-income elders in Cochin, India receive special treatment, thanks  to a group of professional staff and volunteers from the Alzheimer’s and Related  Disorders Society of India (ARDSI). While traveling around India, Greenblatt  visited the home of a woman with advanced dementia whose bed consisted of little  more than a wooden frame with a piece of cardboard over it. Still the woman was  able to receive a treatment plan and regular in-home visits from ARDSI  caregivers and social workers.

France: Greenblatt describes the remarkable transformation  of a dementia-stricken Frenchman named Marcel. In a special Snoezelen room at  the Villa Helios in Nice, France, Marcel, whose condition was causing him to act  angry and violent, was changed into a gentler, more caring soul. Snoezelen rooms  are used to calm those with cognitive disorders, such as autism  and dementia. They contain an array of different sensory stimuli, including  water beds, soothing scents, soft lighting, and even big water tubes with  bubbles piped into them.

The Netherlands: Just beyond the outskirts of Amsterdam lies  Hogewey, a quaint village occupied by just over a hundred people. The town has a  theatre, a grocery store, a beauty salon, restaurants and cafes. What makes  Hogewey different from the traditional European hamlet is the fact that nearly  half of its inhabitants have moderate or severe dementia. The remaining “residents” are in fact specially-trained caregivers who pose as beauticians and  restaurant staff, all the while making sure those with cognitive impairment  remain safe and calm.  The so-called “dementia village” is actually an innovative care facility  designed to make those suffering from memory loss feel as though they are living  regular lives and remain engaged with their environment. Residents’ rooms are  decorated based on their hobbies and interests, food preparation and service are  tailored towards individual preferences and there are always staff members  available to provide hands-on care for those who need it. Other caregivers  surreptitiously keep an eye on the residents as they go out shopping or to the  salon, always ready to step in and make sure no one endangers themselves. The  village’s single exit is manned by a staffer who tells any approaching resident  that the door is either broken or barred and offers an alternative path. This  prevents residents from wandering away and becoming lost—an especially common  concern for those with profound dementia.

The United Kingdom: The Pan-London Dementia Action Alliance  recently announced a formal push to make London the world’s first  dementia-friendly capital city. Unlike Hogewey—a self-contained village created  specifically for those with dementia—London aims to integrate the  cognitively-impaired into its pre-existing metropolis more effectively. This  will involve the coordination of countless smaller initiatives, such as making  landmarks more accessible and instructing fire fighters, policemen and bus  drivers how to identify and communicate with the dementia-stricken.

Across the world, person-centered dementia care is rapidly replacing the  outdated paradigms that relegated the cognitively impaired to wheelchairs in  locked wards.

Greenblatt is cheered by these shifting tides because that means fewer and  fewer people with dementia will be treated like her grandparents were. “It’s a  tragic disease and you have no control over the cards you’re dealt. But you do  have control over how you play the hand. There are ways to make the situation  livable for everyone involved.”
