9 Health Benefits of Sweet Potatoes

1.  They are high in vitamin B6.  Vitamin B6 helps reduce the chemical homocysteine in our bodies. Homocysteine has been linked with degenerative diseases, including heart attacks.

2. They are a good source of vitamin C.  While most people know that vitamin C is important to help ward off cold and flu viruses, few people are aware that this crucial vitamin plays an important role in bone and tooth formation, digestion, and blood cell formation. It helps accelerate wound healing, produces collagen which helps maintain skin’s youthful elasticity, and is essen­tial to helping us cope with stress. It even appears to help protect our body against toxins that may be linked to cancer.

3.  They contain Vitamin D which is critical for immune system and overall health at this time of year.  Both a vitamin and a hormone, vitamin D is primarily made in our bodies as a result of getting adequate sunlight. You may have heard about seasonal affective disorder (or SAD, as it is also called), which is linked to inadequate sunlight and therefore a vitamin D deficiency. Vitamin D plays an important role in our energy levels, moods, and helps to build healthy bones, heart, nerves, skin, and teeth, and it supports the thyroid gland.

4.  Sweet potatoes contain iron. Most people are aware that we need the mineral iron to have adequate energy, but iron plays other important roles in our body, including red and white blood cell production, resistance to stress, proper im­mune functioning, and the metabolizing of protein, among other things.

5.  Sweet potatoes are a good source of mag­nesium, which is the relaxation and anti-stress mineral. Magnesium is necessary for healthy artery, blood, bone, heart, muscle, and nerve function, yet experts estimate that approximately 80 percent of the popula­tion in North America may be deficient in this important mineral.

6.  They are a source of potassium, one of the important electrolytes that help regulate heartbeat and nerve signals. Like the other electrolytes, potassium performs many essential functions, some of which include relaxing muscle contractions, reducing swelling, and protecting and controlling the activity of the kidneys.

7. Sweet potatoes are naturally sweet-tasting but their natural sugars are slowly released into the bloodstream, helping to ensure a balanced and regular source of energy, without the blood sugar spikes linked to fatigue and weight gain.

8. Their rich orange color indicates that they are high in carotenoids like beta carotene and other carotenoids, which is the precursor to vitamin A in your body.  Carotenoids help strengthen our eyesight and boost our immunity to disease, they are powerful antioxidants that help ward off cancer and protect against the effects of aging. Studies at Harvard University of more than 124,000 people showed a 32 percent reduction in risk of lung cancer in people who consumed a variety of carotenoid-rich foods as part of their regular diet. Another study of women who had completed treatment for early stage breast cancer conducted by researchers at Women’s Healthy Eating and Living (WHEL) found that women with the highest blood concentrations of carotenoids had the least likelihood of cancer recurrence.

9.  There are versatile. Try them roasted, puréed, steamed, baked, or grilled. You can add them to soups and stews, or grill and place on top of leafy greens for a delicious salad. I enjoy grilling them with onions and red peppers for amazing sandwich or wrap ingredients.  Puree them and add to smoothies and baked goods.

 Clever Tips to Make Produce Last Longer

10 Foods for Healthy Skin

Letting veggies and fruit go bad isn’t just a bummer for our budgets, it’s also a problem for the planet. According to the World Resources Institute, 25 percent of calories grown around the globe for human consumption don’t get eaten. That’s a big waste of resources like water, fertilizer and energy needed for transportation.

The good news is that reducing food waste in our own homes not only helps the environment, it also saves us money. Here are some less common and clever tips for getting your produce to last longer.

1. Store avocados with some onion slices
Avocados and onions make for great guacamole, but did you know these two are a good team before you eat them? Be sure to keep the pit too.

 

2. Make an herb bouquet
Basil, parsley and cilantro like to get their feet wet. Care for these herbs just like cut flowers: trim the stems, keep them at room temperature and change the water frequently. Plus, they’re so pretty!

3. Chop off the carrot tops
Carrot greens are actually edible, but if you leave them intact in the fridge it will make your carrots limp. Before storing in the fridge, separate the root from the greens.

4. Don’t store potatoes with onions
This tip comes from the cooks over at The Kitchn. Apparently, onions release gas that can speed the spoilage of spuds. Potatoes do best in a cool, dry place away from light, such as a pantry or closet. The fridge is ok, but it can add a sweet flavor to potatoes.

5. Keep celery in water
To keep celery crisp for longer, cut off the bottom and store it upright in a jar or pitcher of water the refrigerator. Keep in mind that limp celery is still great in soup, stuffing or juice.

6. Don’t put asparagus in the fridge
This tip comes from an archive post by Ramon Gonzales. It turns out, asparagus doesn’t need refrigeration. Instead, store it at room temperature. Stand the stalks upright in a glass or bowl of water, loosely arranged. This can keep asparagus for up to a week.

Of course, rot happens. If your produce takes a turn for the moldy, the compost is still a much better option than the trash.

10 Ways to Reuse Banana Peels

But there’s good news: We are seeing a lot of action to reduce the amount of food we toss. A French grocery store started selling ugly fruits and vegetables at discounted prices. An American beer company created a reverse food truck that collects food donations and reroutes them to the local food bank. Europe is considering eliminating those misleading “best before” dates stamped on food.

All good news. But what can you do in your own home? How about looking for inventive ways to use food parts you would normally chunk. Let’s start with banana peels!

Sustainable America developed this infographic revealing all things banana eaters need to know about their beloved yellow fruits, including 10 things to do with the peels. Apparently we throw away 25% of the bananas we bring home, and we send 780 million pounds of banana peels to the landfill every year in the U.S. But check out these brilliant ideas for using those seemingly worthless peels — from feeding and fertilizing your plants to tenderizing meat. Keep reading past the infographic for additional ideas I discovered for using those peels.

Amazing stuff right? But here’s more: After a quick search, I uncovered a great source of information for eliminating waste in all aspects of your lives: Trash Backwards. In their list of 20 ways to use banana peels, they suggest using them to whiten your teeth, control aphids in your garden (I will be using this tip), and to cure hemorrhoids (I hope I don’t need to use this one).

These ideas have inspired me to pay a bit more attention to what I throw away (food and non-food alike) and see what I can do with it. What type of waste do you want to find new ways to repurpose? Let me know and you may see a future blog post with inspiration written just for you!

We are right on the cusp of summer, which means we’ve got maybe another couple of weeks to track down some beautiful spring produce before it starts to wane. Here are 7 yummy spring fruits and veggies to find right now!

Depending on where you live, you may have an easier or tougher time tracking down spring produce so late in the season. If it’s been cooler where you are, you’ve got a better chance of finding the more elusive spring produce this close to summer. When you head to the farmers market this weekend, keep these spring beauties in mind!

1. Watercress

This leafy green is getting some superfood cred lately, and it’s a lovely addition to sandwiches, salads, and soups. If you’re new to watercress, don’t worry! Here are some tips on growing your own along with how to prepare it.

2. Sorrel

8 Foods That Surprisingly Impact Sleep

 

 We all know that drinking coffee before bed will make it hard to fall asleep, and that drinking warm milk will help us fall asleep faster —  at least according to our mothers. But did you know that there are plenty of other foods that can impact our slumber? By making a few small changes in your diet, you may not be cured of your insomnia, sure, but you’ll be much better off for it. Check out some of the best — and worst — foods for a good night’s rest.

 

1. Good: Walnuts & Almonds

Almonds contain hefty doses of magnesium, tryptophan and melatonin, a trifecta of ideal sleep-promoting aids. Try eating a handful an hour or so before bed.

 

2. Bad: Grapefruit.

There’s nothing like heartburn for keeping you up all night, and grapefruit increases your stomach’s acidity. If you’d like to avoid heartburn, stay away from grapefruit and other citrus fruits and juices before hitting the sack.

 

3. Good: Oatmeal.

Most of us only eat the stuff in the morning, but the benefits of eating oatmeal before bed might change your habits. Oatmeal is full of plenty of sleep-promoting nutrients, like magnesium, potassium calcium and phosphorous.

 

4. Bad: Celery.

No, really! Celery is certainly a healthy veggie, but it’s not best to eat it before bed. Why? Well, celery is a natural diuretic, and, unless you want to disrupt your slumber with a middle of the night bathroom run, it’s best to avoid it.

Other Natural Diuretics to Avoid Before Bed: Ginger, Parsley.

 

5. Good: Raspberries & Tart Cherries.

Melatonin is a popular supplement for sleep aid, and there are a few, though not many, natural sources of the stuff. Your best bets are raspberries and tart cherries.

 

6. Bad: Greasy & Fried Foods.

People who eat fatty, greasy and fried foods in the evening tend to get less productive sleep than those who don’t. Your stomach is working extra hard to digest the stuff, and can lead to indigestion and heart burn. It’s fine to indulge in calorie-rich foods every once in a while, but try to do so at least 3 hours before you go to sleep.

 

7. Good: Bananas.

With plenty of potassium and magnesium, bananas are an excellent late night snack and natural muscle relaxer. It also contains tryptophan, the same amino acid that gives turkey its famous sleep-inducing reputation.

 

8. Bad: Spicy Foods.

Spicy foods will certainly take a toll on your gut, but they also may impact your sleep. It’s best to avoid spicy meals right before hitting the sack.

Can you eat your way to a better mood? More and more scientific research is saying so. Maintaining a healthy and balanced diet is important for your general health, so why should it be any different for your mental health? From depression-fighting seeds to anxiety-zapping greens, read about the best nutrients for your mood.

 

1. Sesame Seeds.

Good things come in small packages. The unassuming sesame seed is loaded with mood-boosting nutrients. Sesame seeds are on of the best vegetarian sources of zinc, a mineral that has been linked to depression and anxiety. One study found that zinc treatment lowered the depression and anger levels of young women. Other studies have suggested using the mineral as a treatment for depression.

A few bites of real, dark chocolate each day will help your mood and your tastebuds! Studies have suggested that dark chocolate reduces the level of cortisol, a stress hormone, in your body; it may also relieve anxiety. Leesa recommends 85% organic dark chocolate from Vivani!

 

3. Spinach.

As if you needed another reason to love spinach! This leafy green is loaded with all sorts of mood-boosting nutrients, from depression-fighting folates (more on that later) to anxiety-easing magnesium. Spinach also contains plenty of zinc — studies have shown that, the less zinc you have in your body, the more likely you are to be depressed.

 

4. Yogurt.

Yogurt is an excellent vegetarian source of vitamin B12, a vital nutrient for the formation of red blood cells. For reasons scientists aren’t exactly clear on yet, B vitamins seem to play a vital role in our mental health. Vitamin B12 deficiencies in particular have been linked to high rates of depression, and studies have suggested that strong intake of the vitamin may improve depression treatment outcomes. If your body doesn’t get enough of the stuff, it can actually lead to serious mental health issues. Because plants cannot make Vitamin B12, your best sources for the stuff are dairy products, eggs, seafood, and meat. Vegans and older adults are especially at risk of a Vitamin B12 deficiency, and may want to talk with their doctors about supplements or fortified foods.

5. Lentils.

Lentils, along with other foods rich in folic acid, are a key nutrient for treating depression. Like it’s B vitamin cousin, vitamin B12, plenty of research has linked low levels of folic acid to depression. It’s also thought that high levels of the vitamin will actually help anti-depressants work more effectively.  Healthy carbs help boost serotonin levels.

Other Foods Rich in Folates: Pinto, black, navy, kidney & garbanzo beans; spinach, asparagus, turnip greens and broccoli.

6. Flaxseeds.

The countries with the lowest rates of depression tend to have one thing in common: they also eat the most fish. Scientists think this is because fish is rich in omega-3 fatty acids. Studies have shown that these polysaturated fats can improve your mood, and help treat depression and postpartum depression, schizophrenia and bipolar disorder. Though fish is probably your best source of omega-3 fatty acids, most healthy people can get all of it they need from flaxseeds and flaxseed oil. You can also check out supplements or sea vegetables if you are a vegan or a vegetarian.

Shocking “Health” Companies to Avoid in 2013

 

When it comes to what you put in your body I believe you have a right to  know.  That includes when genetically-modified organisms (GMOs) are found  in foods you might be eating.  After all, GM foods increase the  risk of allergic reactions, antibiotic resistance, pesticide exposure,  reproductive damage, cancer, diabetes, Alzheimer’s disease and many  potential long-term health issues that we simply don’t know yet.  Human  ancestors may have lived on the planet for thousands of years but this is the  first time in our evolution that we’ve been unsuspectingly part of a long-term experiment with genetically-modified foods.

Even the World Health Organization and the American Medical  Association have spoken out about the need to phase out the use of antibiotics  in the making of genetically-modified foods.  And as for the  argument that genetic modification reduces pesticide exposure, a recent study  from Washington State University found that the use of herbicides has  increased by about 25 percent in the three main GM crops.

The problem isn’t just the genetically modified foods; it is also the  lack of transparency surrounding these foods. In North America and many  other places in the world, genetically modified organisms are not identified or  labelled on foods.  Recently California had the opportunity to force GM  foods to be labelled under Proposition 37.  Thanks to a massive campaign on  the part of corporations using GM foods, the bill was shot down.  Based on  the research of The Cornucopia Institute, here are some of the companies who  opposed this important legislation.  In other words, they don’t think you  have the right to know what is in the food you put in your body:

Of course, Monsanto, Dow Agrosciences and Bayer Cropscience are on the list  too but I don’t think many people would consider these corporations “health  companies.”  The companies above stood alongside Monsanto to prevent you  from knowing the harmful frankenfoods you’re eating while they continue to take  your money for their “health products.”  We’ve been inundated with  green-washing but “health-washing” is becoming just as common.

If you think you have a right to know when Frankenfoods are contained in the  foods you’re eating, tell these companies by voting with your dollars.   Avoid the “health food” companies on this list if you want to see  genetically-modified organisms labelled on foods.  Their parent companies  (in parentheses) have been spending their money to fight Prop 37.  No one should have the right to hide potentially-harmful substances in  your food without your knowledge.

Even if you don’t plan on doing a detox program, your health will benefit from adding more  detox superfoods to your daily diet. There are many great superfoods with  detoxifying properties, but here are my top 12 picks.  And, they’re  delicious too.

Almonds—are high in fiber, calcium, magnesium, and useable protein that helps stabilize blood sugar and remove  impurities from the bowels.

Avocados—lower cholesterol and dilate blood vessels while  blocking artery-destroying toxicity. Avocados contain a nutrient called  glutathione, which blocks at least 30 different carcinogens while helping the  liver detoxify synthetic chemicals. Researchers at the University of Michigan  found that elderly people who had high levels of glutathione were healthier and  less likely to suffer from arthritis.

Beets—contain a unique mixture of natural plant chemicals  (phytochemicals) and minerals that make them superb fighters of infection, blood  purifiers, and liver cleansers. They also help boost the body’s cellular intake  of oxygen, making beets excellent overall body cleansers. Aphrodite, according  to legend, ate beets to retain her beauty. She was definitely on to a good thing  since beets, in addition to all the benefits listed above, also help stabilize  the blood’s acid-alkaline balance (pH), which in turn supports healthy  detoxification.

Blueberries—contain natural aspirin that helps lessen the  tissue-damaging effects of chronic inflammation, while lessening pain. Blueberries also act as antibiotics by blocking bacteria in  the urinary tract, thereby helping to prevent infections. They have antiviral  properties and are loaded with super-detoxifying phytonutrients called  proanthocyanidins.

Cabbage—contains numerous anti-cancer and antioxidant  compounds and helps the liver break down excess hormones. Cabbage also cleanses  the digestive tract and soothes the stomach, which could in part be due to its  antibacterial and antiviral properties. Cruciferous vegetables like cabbage  (kale is another excellent choice—see below) demonstrate powerful detoxification  activity, including neutralizing some of the damaging compounds found in  cigarette smoke (and second-hand smoke). They also contain a compound that helps  the liver produce adequate amounts of enzymes for detoxification.

Cranberries—have powerful antibiotic and antiviral  substances to help the body cleanse harmful bacteria and viruses from the  urinary tract.

Flaxseeds and Flaxseed Oil— are loaded with essential fatty  acids, particularly the omega-3s. They are essential for many cleansing functions  and maintaining a healthy immune system. They are also critical to maintaining a  healthy brain. The health of every cell in your body is dependent on getting  adequate amounts of essential fatty acids.

Garlic—helps cleanse harmful bacteria, intestinal parasites,  and viruses from the body, especially from the blood and intestines. It also  helps cleanse buildup from the arteries and lowers blood pressure. Garlic has  anti-cancer and antioxidant properties that help detoxify the body of harmful  substances. It also helps cleanse the respiratory tract by expelling mucous  buildup in the lungs and sinuses. I am referring to fresh garlic, not garlic  powder, which has virtually none of the above properties.

Kale—contains  powerful anti-cancer and antioxidant compounds that help cleanse the body of  harmful substances. It is also high in fiber, which helps cleanse the intestinal  tract. Like cabbage, kale helps neutralize compounds found in cigarette smoke  and contains a substance that jump-starts the liver’s production of cleansing  enzymes.

Legumes—are loaded with fiber that helps lower cholesterol,  cleanse the intestines, and regulate blood sugar levels. Legumes also help  protect the body against cancer.

Lemons— are superb liver detoxifiers. In addition, they contain high amounts of  vitamin C, a vitamin needed by the body to make a substance called glutathione.  Glutathione helps ensure that phase 2 liver detoxification keeps pace with phase  1, thereby reducing the likelihood of negative effects from environmental  chemicals. Vitamin C and other antioxidants found in lemons are integral to ward  off cancer, fight the effects of pollution and cell damage. Fresh lemon juice  contains more than 20 anti-cancer compounds and helps balance the body’s pH  levels.

Seaweed—could be the most underrated vegetable in the  Western world. Studies at McGill University in Montreal showed that seaweeds  bind to radioactive waste in the body so it can be removed. Radioactive waste  can find its way into the body through some medical tests or through food that  has been grown where water or soil is contaminated. Seaweed also binds to heavy metals to help eliminate them  from the body. In addition, it is a powerhouse of minerals and trace  minerals.

1. In study after study, research from independent organizations consistently shows organic food is higher in nutrients than traditional foods. Research shows that organic produce is higher in vitamin C, antioxidants, and the minerals calcium, iron, chromium, and magnesium.

2. They’re free of neurotoxins–toxins that are damaging to brain and nerve cells. A commonly-used class of pesticides called organophosphates was originally developed as a toxic nerve agent during World War I. When there was no longer a need for them in warfare, industry adapted them to kill pests on foods. Many pesticides are still considered neurotoxins.

3. They’re supportive of growing children’s brains and bodies. Children’s growing brains and bodies are far more susceptible to toxins than adults. Choosing organic helps feed their bodies without the exposure to pesticides and genetically-modified organisms, both of which have a relatively short history of use (and therefore safety).

4. They are real food, not pesticide factories. Eighteen percent of all genetically-modified seeds (and therefore foods that grow from them) are engineered to produce their own pesticides. Research shows that these seeds may continue producing pesticides inside your body once you’ve eaten the food grown from them! Foods that are actually pesticide factories…no thanks.

5. The US Environmental Protection Agency (EPA) estimates that pesticides pollute the primary drinking source for half the American population. Organic farming is the best solution to the problem. Buying organic helps reduce pollution in our drinking water.

6. Organic food is earth-supportive (when big business keeps their hands out of it). Organic food production has been around for thousands of years and is the sustainable choice for the future. Compare that to modern agricultural practices that are destructive of the environment through widespread use of herbicides, pesticides, fungicides, and fertilizers and have resulted in drastic environmental damage in many parts of the world.

7. Organic food choices grown on small-scale organic farms help ensure independent family farmers can create a livelihood. Consider it the domestic version of fair trade.

8. Most organic food simply tastes better than the pesticide-grown counterparts.

9. Organic food is not exposed to gas-ripening like some non-organic fruits and vegetables (like bananas).

10. Organic farms are safer for farm workers. Research at the Harvard School of Public Health found a 70 percent increase in Parkinson’s disease among people exposed to pesticides. Choosing organic foods means that more people will be able to work on farms without incurring the higher potential health risk of Parkinson’s or other illnesses.

11. Organic food supports wildlife habitats. Even with commonly used amounts of pesticides, wildlife is being harmed by exposure to pesticides.

12. Eating organic may reduce your cancer risk. The US Environmental Protection Agency (EPA) considers 60% of herbicides, 90% of fungicides, and 30 percent of insecticides potentially cancer-causing. It is reasonable to think that the rapidly increasing rates of cancer are at least partly linked to the use of these carcinogenic pesticides.

13. Choosing organic meat lessens your exposure to antibiotics, synthetic hormones, and drugs that find their way into the animals and ultimately into you.

14. Organic food is tried and tested. By some estimates genetically-modified food makes up 80% of the average person’s food consumption. Genetic modification of food is still experimental. Avoid being part of this wide scale and uncontrolled experiment.

15. Organic food supports greater biodiversity. Diversity is fundamental to life on this planet. Genetically-modified and non-organic food is focused on high yield monoculture and is destroying biodiversity.
