Lycopene, the Powerful Nutrient That May Help Prevent Cancer

Lycopene, the Powerful Nutrient That May Help Prevent Cancer

Lycopene is what gives red fruits and vegetables their bright red color. You will find lycopene in red foods like tomatoes, watermelon, apricots, red grapefruit, guava, red carrots, papaya and rose hips.

Lycopene is a powerful antioxidant that inhibits free radicals. Free radicals are molecules that have an unpaired electron and are therefore unstable. The molecule stabilizes itself by stealing electrons from live cell membranes. This damages the cell and promotes disease.

The super antioxidant, Lycopene neutralizes free radicals by binding to them and stabilizing them. The free radicals no longer create cell damage that can result in diseases such as cancer and heart disease.

Lycopene has been found to help reduce prostate, lung, pancreas, colon and rectum, esophagus, oral cavity, breast, and cervix and stomach cancers according to Scientific studies.

lycopene sources

As you can see above, tomato products are high sources of lycopene — but raw tomato is significantly lower.

“The best sources of lycopene are tomatoes and tomato products, which is where about 80 percent of lycopene in the average American diet comes from.” says the Physician Committee for Responsible Health

According to the Oxford Journals, consuming tomatoes and tomato-based products have been shown to lower risk of a variety of cancers. The cancers which responded the most were the lung, stomach, and prostate gland.  Research also indicated that lycopene may be preventive for cancers of the breast, cervix, oral cavity, colorectum, esophagus, and pancreas. Studies go on to say that it is important to consume tomatoes and tomato products rather than purified lycopene supplements.

??????????????????????????

Cancer and Tomatoes

  • Tomatoes reduce breast cancer due to high amounts of carotenoids (alpha-carotene, beta-carotene, lutein, zeaxanthin, lycopene and total carotenoids), according to research from the Journal of the National Cancer Institute.
  • Tomatoes may help prevent prostate cancer. A study found that men who ate more than 10 portions of tomatoes or tomato products per week have an 18 percent reduced risk of prostate cancer compared to men who ate less than ten.

How To Get Lycopene In Your Diet

  • The best way to get lycopene into the body is to cook with tomatoes and eat them in a meal that provides a small amount of fat. One study showed that when oil was added to heated tomato juice, the blood lycopene levels increased more than when plain, unheated tomato was consumed. Now, that obviously doesn’t mean you should eat lots of chips with ketchup thinking you are helping prevent cancer. Too much oil has its own health risks.
  • As said above, lycopene supplement extracts do not work well. This is most likely because there are other phytochemicals in tomatoes that may be needed to do the job. Eat real food: eat your fruits and vegetables!
  • Don’t forget watermelon! Although a slice of watermelon has only one half the amount of lycopene as a glass of tomato juice, think about how much watermelon you can eat! Watermelon makes a great breakfast just by itself.  This is important for those who don’t like tomatoes or avoid them because they are in the nightshade produce family.

Leesa recommending choosing organic tomatoes and organic tomatoe sauce in glass jars only.

Is Organic Food More Nutritious Than Conventional? Large Study Says Yes.

Is Organic Food More Nutritious Than Conventional? Large Study Says Yes.

A meta-analysis published in the British Journal of Nutrition analyzing 343 studies that compare the nutritional value of organic to conventional produce delivers a pretty convincing verdict: organic produce IS better than food grown with pesticides.

The authors of the study found statistically significant differences between organic and non-organic crops, particularly in antioxidant values. Antioxidants are nutrients that destroy cell-damaging free radicals linked with aging and disease. In addition to higher levels of vitamins and minerals, certain other nutrients such as phenolic acids, flavanones, flavonols, and anthocyanins were 19%, 69%, 50%, and 51% higher in organic produce, respectively.

These compounds have been linked to a reduced risk of many chronic diseases, including heart disease, neurodegenerative diseases and some forms of cancer.

Not only are organic fruits and vegetables more nutritious than conventional produce, researchers found significantly lower levels of the highly-toxic heavy metal cadmium and pesticide residues. According to the Centers for Disease Prevention and Control, in animals, chronic ingestion of cadmium causes increased blood pressure, reduced blood flow to the limbs, and especially kidney disease.

According to the CDC’s Agency for Toxic Substances and Disease Registry, the kidneys are the primary organs targeted by chronic exposure to cadmium. Human studies show that there is a latency period of approximately 10 years after cadmium exposure before the onset of kidney damage, depending on intensity of exposure. Cadmium accumulates in the bones and reduces calcium absorption thereby affecting bone density.

While organic produce can be more expensive than conventional produce, you can save money by growing your own. You can also prioritize produce on the EWG’s “dirty dozen” list to reduce pesticide consumption.

Not Into Green Tea? 6 Other Teas That Are Amazing for You

Not Into Green Tea? 6 Other Teas That Are Amazing for You

Oolong Tea

Oolong tea combines some of the best perks of other teas—it’s second only to black tea when it comes to caffeine levels, and second to green tea when it comes to an antioxidant boost. Plus, it may even help boost metabolism and aid in weight loss.

Darjeeling Tea

Steep a cup of this tea from India to help prevent ulcers, gastritis, and gastric cancer—research has found that darjeeling inhibits a pathogen carried by more than half the population that leads to those ailments.

Black Tea

Four cups of black tea a day was found to reduce stroke risk by 21 percent compared to those who never drank tea, a study of 75,000 men and women found last year. Can’t handle that many cups? Black tea is full of antioxidant compounds that may help ward off Parkinson’s and Alzheimer’s. And just one or two cups per day has been associated with a 70% lower chance of having or developing type 2 diabetes.

White Tea

White tea isn’t as packed with caffeine as other teas, but it packs a huge health punch, with potential cardiovascular and cancer-fighting benefits, and possibly even benefits for those with diabetes—one animal study found that drinking white tea resulted in better glucose tolerance and reduced LDL cholesterol.

Honeysuckle Tea

New research says to brew a cup of honeysuckle tea during flu season—scientists found an ingredient in the tea that they say acts like “viral penicillin.”

Hibiscus Tea

High blood pressure? Try three cups of hibiscus tea every day, which has been found to reduce systolic blood pressure by an average of seven points. And even a small reduction in blood pressure can reduce the risk of stroke and heart attack.

Leesa recommends drinking only organic teas!

9 Health Benefits of Sweet Potatoes

9 Health Benefits of Sweet Potatoes

1.  They are high in vitamin B6.  Vitamin B6 helps reduce the chemical homocysteine in our bodies. Homocysteine has been linked with degenerative diseases, including heart attacks.

2. They are a good source of vitamin C.  While most people know that vitamin C is important to help ward off cold and flu viruses, few people are aware that this crucial vitamin plays an important role in bone and tooth formation, digestion, and blood cell formation. It helps accelerate wound healing, produces collagen which helps maintain skin’s youthful elasticity, and is essential to helping us cope with stress. It even appears to help protect our body against toxins that may be linked to cancer.

3.  They contain Vitamin D which is critical for immune system and overall health at this time of year.  Both a vitamin and a hormone, vitamin D is primarily made in our bodies as a result of getting adequate sunlight. You may have heard about seasonal affective disorder (or SAD, as it is also called), which is linked to inadequate sunlight and therefore a vitamin D deficiency. Vitamin D plays an important role in our energy levels, moods, and helps to build healthy bones, heart, nerves, skin, and teeth, and it supports the thyroid gland.

4.  Sweet potatoes contain iron. Most people are aware that we need the mineral iron to have adequate energy, but iron plays other important roles in our body, including red and white blood cell production, resistance to stress, proper immune functioning, and the metabolizing of protein, among other things.

5.  Sweet potatoes are a good source of magnesium, which is the relaxation and anti-stress mineral. Magnesium is necessary for healthy artery, blood, bone, heart, muscle, and nerve function, yet experts estimate that approximately 80 percent of the population in North America may be deficient in this important mineral.

6.  They are a source of potassium, one of the important electrolytes that help regulate heartbeat and nerve signals. Like the other electrolytes, potassium performs many essential functions, some of which include relaxing muscle contractions, reducing swelling, and protecting and controlling the activity of the kidneys.

7. Sweet potatoes are naturally sweet-tasting but their natural sugars are slowly released into the bloodstream, helping to ensure a balanced and regular source of energy, without the blood sugar spikes linked to fatigue and weight gain.

8. Their rich orange color indicates that they are high in carotenoids like beta carotene and other carotenoids, which is the precursor to vitamin A in your body.  Carotenoids help strengthen our eyesight and boost our immunity to disease, they are powerful antioxidants that help ward off cancer and protect against the effects of aging. Studies at Harvard University of more than 124,000 people showed a 32 percent reduction in risk of lung cancer in people who consumed a variety of carotenoid-rich foods as part of their regular diet. Another study of women who had completed treatment for early stage breast cancer conducted by researchers at Women’s Healthy Eating and Living (WHEL) found that women with the highest blood concentrations of carotenoids had the least likelihood of cancer recurrence.

9.  There are versatile. Try them roasted, puréed, steamed, baked, or grilled. You can add them to soups and stews, or grill and place on top of leafy greens for a delicious salad. I enjoy grilling them with onions and red peppers for amazing sandwich or wrap ingredients.  Puree them and add to smoothies and baked goods.

Leesa recommends choosing only organic sweet potatoes!

The Top 5 Fat-Burning Spices

Top 5 Fat-Burning Spices

Losing weight can be a lot easier if you spice up your food.  Add these top five fat-burning spices to your diet to ramp up weight loss:

1. Garlic and 2. Onions;  These yummy foods contain phytochemicals that break down fatty deposits in the body while also breaking down cholesterol; kill viruses, bacteria and fungi; and protect against heart disease.

3. Turmeric:  this popular spice, used primarily in Indian cooking, is the highest known source of beta-carotene, the antioxidant that helps protect your liver from free radical damage.  Turmeric also helps your liver heal while helping your body metabolize fats by decreasing the fat storage rate in liver cells.  Turmeric has the added advantage of being shown in study after study to protect the brain against damage, including diseases like Alzheimer’s and Parkinson’s.

4. Cinnamon:  Researchers at the United States Department of Agriculture showed that one-quarter teaspoon to 1 teaspoon of cinnamon with food helps metabolize sugar up to 20 times better than without cinnamon.  Excess sugar in the blood can lead to fat storage.  Because cinnamon balances blood sugar levels it has the added advantage of stabilizing mood and energy levels.

5. ChilesAdd some heat to your food to fire up your metabolism. Capsaicin, the active ingredient in chile peppers, significantly improves fat burning.  Additionally, chiles help boost energy levels as well.

It’s easy to benefit from the fat-burning ability of spices.  Simply start adding more fresh garlic and onions to your vegetable dishes, soups, stir-fries, stews, and curries.  Turmeric is excellent in curry dishes.  Cinnamon is not only good with sweet foods, it is also excellent in savory dishes and can be added to Asian-inspired foods like curries, stir-fries, and stews.  Chiles can be added to almost anything for a blast of heat.

Leesa recommends all your spices, onions, and chiles be organic!

The Impressive Anti-Cancer Power of Berries

The Impressive Anti-Cancer Power of Berries

For disease prevention and health maintenance, berries of all colors have “emerged as champions.” Research has focused mainly on cancer prevention and treatment. Studies show that the anticancer effects of berries are partially mediated through their abilities to counteract, reduce, and also repair damage resulting from oxidative stress and inflammation. Berries may also have many other positive effects, such as boosting detoxifying enzymes.

One of the more remarkable effects is that of blueberries on natural killer cell counts. Natural killer cells are part of our immune system’s rapid response team against cancer cells, eliminating cancer cells through the activation of cancer cell suicide via death receptors. They’re called natural killers because they don’t require activation by prior exposure. We don’t want to wait until our second tumor before our immune system starts fighting.

We have about two billion of these soldiers circulating in our blood stream at any one time, but we may be able to get a troop surge with blueberries. Researchers had athletes eat about a cup and a half of blueberries a day for six weeks to see if that would reduce the oxidative stress of long-distance running. They indeed saw a blunting of the spike in oxidant stress. But that’s not what sets that study apart.

The number of natural killer cells in the blood typically decreases after prolonged endurance exercise, dropping by half to only about one billion—that is, unless we’ve been eating lots of blueberries. If you click on the video on the next page, you can see a graph comparing natural killer cell numbers with and without blueberries.  Those who ate blueberries retained close to the standard two billion cells. This is because six weeks of blueberries had doubled the resting number of natural killer cells up to over four billion. This has never before been demonstrated in humans. There was a study on goji berries, but despite a cup a day for a month, there was no significant change in the number of natural killers.

Another study, though, showed a significant increase in natural killer cell activity thanks to the spice cardamom. (Cardamom and blueberries—I never thought we’d be fighting cancer with blueberry muffins!) When researchers took some lymphoma cells in a petri dish and added cardamom, nothing happened. However, if we add some natural killer cells, about 5% of the cancer cells are wiped out. Add a little more cardamom, and our troops do better still. And then if we add more and more spice, then all of a sudden the natural killer cells are killing cancer like crazy—the same number of natural killer cells, but they’re now able to kill off ten times more cancer cells. While cardamom alone had no effect on cancer cells even at the highest dose, it seemed to enhance our natural killer cells’ killer instincts.

The same thing was found for black pepper: Black pepper alone, nothing, but when combined with natural killer cells, there seemed to be a boosting effect up to around 30 or 40% cancer cell clearance. If cardamom and black pepper are combined, they synergize and their individual effects are doubled. The researchers conclude that “Taken together, these data strongly suggest that black pepper and cardamom have the potential to markedly enhance the anti-cancer activity of natural killer cells.”

Exercise itself can improve immune function in general, but the blueberry finding is so far unique.

It is true that the blueberry study was funded by the North American Blueberry Council and the North Carolina High-bush Blueberry Council. However, just because the study was funded by blueberry councils doesn’t necessarily mean the science is suspect, but we would want to see the study independently verified, especially one so dramatic.

9 Amazing Health Benefits of Strawberries

9 Amazing Health Benefits of Strawberries

Fragrant and sweet, strawberries are one of the most popular types of berry in the world — and for good reason. Read below to learn how these little sweet hearts can benefit the organ they resemble — the heart — and more.

  • Reduce Risk of Cardiovascular Disease: According to a Harvard School of Public Health study, women who eat three or more servings of strawberries a week have a lower risk of suffering a heart attack. Strawberries contain the dietary flavonoid anthocyanin, which may benefit the heart by improving blood flow and countering the build-up of plaque, reducing blood pressure and inflammation. The fiber and potassium in strawberries also support heart health.

  • Anti Inflammatory: The colorful pigments of berries (polyphenols) are known to have antioxidant activity. Strawberries lower blood levels of C-reactive protein (CRP), a signal of inflammation in the body. Antioxidants and phytochemicals found in strawberries may also help to reduce inflammation of the joints, which can cause arthritis and can also lead to heart diseaseResearch suggests we have to eat 3 or more servings of strawberries to reap these benefits, so eat up!

  • Anti Cancer: The flavonoid content in strawberries causes the body to interfere with the stages of development of cancer cells, preventing their ability to multiply. Cancer benefits from strawberries are best documented in cases of breast, cervical and esophageal cancer.

  • Antioxidant Powerhouse: Studies suggest that consumption of berry fruits, including strawberries, may have beneficial effects against oxidative stress mediated diseases such as cancer. Strawberries are one of the most highly concentrated antioxidant fruits. Antioxidants help fight carcinogens and LDL, the bad cholesterol which can lead to heart disease. The powerful antioxidants in strawberries work against free radicals, inhibiting tumor growth and decreasing inflammation in the body.

  • Blood Pressure: Due to their high potassium content, strawberries are recommended to those with high blood pressure to help negate the effects of sodium in the body. A low potassium intake is just as big of a risk factor in developing high blood pressure as a high sodium intake.

  • Immunity Boosting: 1 serving, about 8 strawberries or 1 cup, provides more vitamin C than an orange, about 85mg, or 150% of your daily requirement.

  • Nutrient Dense: The massive nutrition packed into these sweet little guys might warrant “superfood” status. Strawberries are a very good source of dietary fiber (3 grams per cup), iodine and folate. Plus, they are a good source of copper, potassium, biotin, phosphorus, magnesium, vitamin B6 and omega-3 fatty acids.

  • Aid in Weight Management: Strawberries’ low calorie and high nutritional content make them an excellent choice to include in your diet when watching your weight. They also contain anthocyanins which stimulate the burning of stored fat in the body to use as fuel.

  • Help the brain: Studies suggest that antioxidant-rich berries, including strawberries, may help improve learning and reverse age-related cognitive decline.

Who knew that this sweet little fruit could pack so much nutritional punch! Shopping tip: choose medium-sized berries that are firm, plump and deep red; once picked, they don’t ripen further. As you’re estimating your serving size, keep in mind that 8 large strawberries count as 1 cup. I hope you enjoy this healthy recipe. It’s a perfect summer breakfast or late night treat! Enjoy!

Eat 9 Walnuts a Day to Keep Stress at Bay

Eat 9 Walnuts a Day to Keep Stress at Bay
Walnuts are a wonder nut, that offer almost too many health benefits to count. Here is a quick list: Walnuts are a rich source of dietary fiber, antioxidants and omega-3 fatty acids. These compounds work together to help you sleep better, reduce hair loss, prevent diabetes, improve complexion and  lower your risk of certain cancers. But did you know: walnuts are an excellent anxiety-reducing food, too. A first-of-its-kind Penn State University study found that walnuts and walnut oil can reduce blood pressure during periods of stress.  In this study, 22 adults with elevated levels of “bad” cholesterol were put on three different diets for six weeks each. At the end of the study, the three groups were put under mildly stressful situations such as making a speech and dipping a foot in a bucket of ice-cold water. Their blood pressure was measured both before these activities and soon after. Here is what researchers found: The group that was given 9 walnuts and a tablespoon of walnut oil as part of their diet had much lower levels of both resting blood pressure and stress-induced blood pressure.
According to statistics provided by the American Psychological Association, more than 77% of Americans admit to regularly experiencing physical symptoms caused by stress. Since stressful situations cannot be avoided altogether, eating a handful of delicious walnuts and including walnut oil in your daily diet seems like a comforting idea.

7 Winter Vegetables that Boost Your Health

7 Winter Vegetables that Boost Your Health
We rarely think of vegetables in the winter but it is important to eat your veggies this time of year to keep your immune system strong.
Beets Beets are one of the most overlooked superfoods.  They lower blood pressure, increase exercise endurance, and reduce inflammation.  They contain potent phytonutrients called proanthocyanidins which give beets their brilliant purple color.  Proanthocyanidins are proven anti-cancer compounds.  They are packed in nutrients like folate which is important to prevent birth defects, potassium which is critical for healthy muscles and nerves, manganese which helps build strong bones, and vitamin C for a strong immune system.
Carrots – Just one carrot contains 13,500 IU of beta carotene which translates into a tremendous amount of nutritional power against free radicals.  Beta carotene is anti-cancerous, prevents cellular damage and premature aging, and is important to prevent cataracts.

Ginger—Ginger is one of the best natural anti-pain remedies.  Technically it is a spice but it is ideal for winter since it reduces joint pain that plagues so many people with arthritis this time of year.  It also adds warmth to foods and beverages making freshly minced garlic a welcome addition to most soups, stews, and curries.

Rutabaga—Contrary to popular belief, rutabagas are not turnips.  The most common rutabagas are larger than turnips, have purple and cream-colored skins, and tend to have a cream to yellow-colored flesh.  It is high in anti-cancer compounds, immune-boosting vitamin C, fiber, and vitamin B6 which is needed for a healthy nervous system. They are great in soups, stews, curries, and other places you’d use hardy winter veggies.  I love them cut into small cubes, tossed with a bit of olive oil and sea salt and roasted in the oven on 350 for about an hour.

Squash—Squash is rich in beta-carotene, the nutrient that gives squash its brilliant orange-colored flesh.  Enjoy it cut in half, seeded, and roasted.  Add roasted squash to soups, salads, stews, or in wraps and on sandwiches.  Use grated, raw squash in muffin recipes, in place of zucchini in zucchini bread recipes, or in other baked goods to increase their nutritional value.

Sweet Potatoes—Like squash, sweet potatoes are also high in beta carotene.   They also contain vitamins C, B6, and minerals like blood-building iron, energy-boosting potassium, and Nature’s relaxant, magnesium.  Enjoy them chopped into French fry-shapes, tossed in a little olive oil and sea salt and baked in the oven for about 45 minutes on 350 degrees Fahrenheit.

Turnips—Turnips are a good source of fiber which helps to keep blood sugar levels steady and stabilize energy and moods.  They are also a rich source of glucosinolates—the precursors of isothiocyanates that are proven anti-cancer powerhouses.

Study Links Roundup to Obesity, Cancer, and More…

Study Links Roundup to Obesity, Cancer, and More

A new study published in the peer-reviewed journal Entropy  indicates that glyphosate—the main ingredient in Monsanto’s Roundup weed  killer—may be linked to gastrointestinal disorders, obesity, diabetes, heart  disease, depression, autism, infertility, cancer  and Alzheimer’s disease.

The study showed that glyphosate inhibits the function of enzymes that are  critical to enable the body to properly detoxify. Additionally, it also enhances  the damaging effects of other foodborne chemical residues and environmental  toxins.

According to the scientists who completed the study, “The industry asserts  (glyphosate) is minimally toxic to humans, but here we argue otherwise.” They  indicate that residues of glyphosate are found in foods that people are eating  on a regular basis, especially sugar, corn, soy and wheat.

The scientists behind this important study include: Anthony Samsel is a  retired science consultant and member of the Union of Concerned Scientists and  Stephanie Seneff who is a research scientist at the Massachusetts Institute of  Technology. They add that “Negative impact on the body is insidious and  manifests slowly over time as inflammation damages cellular systems throughout  the body.”

Pesticides have been found in many studies  to be toxic to the brain and nervous system of humans.

There is no good reason to use glyphosate or other toxic chemicals on lawns,  agriculture, or food.  Many of these chemicals used in creating “picture-perfect” lawns or in agricultural use are seeping into groundwater and  the residues find their way into our food supply.  The harm to living  organisms appears to outweigh any alleged benefits concocted by corporate  marketing departments.

Many scientists and environmentalists have been warning about the dangers of  glyphosate to plants, animals and people for many years.

Monsanto is the developer of Roundup herbicide as well as the  genetically-modified seeds that have been altered to withstand being sprayed by  Roundup.
