 Clever Tips to Make Produce Last Longer

Letting veggies and fruit go bad isn’t just a bummer for our budgets, it’s also a problem for the planet. According to the World Resources Institute, 25 percent of calories grown around the globe for human consumption don’t get eaten. That’s a big waste of resources like water, fertilizer and energy needed for transportation.

The good news is that reducing food waste in our own homes not only helps the environment, it also saves us money. Here are some less common and clever tips for getting your produce to last longer.

1. Store avocados with some onion slices
Avocados and onions make for great guacamole, but did you know these two are a good team before you eat them? Be sure to keep the pit too.

 

2. Make an herb bouquet
Basil, parsley and cilantro like to get their feet wet. Care for these herbs just like cut flowers: trim the stems, keep them at room temperature and change the water frequently. Plus, they’re so pretty!

3. Chop off the carrot tops
Carrot greens are actually edible, but if you leave them intact in the fridge it will make your carrots limp. Before storing in the fridge, separate the root from the greens.

4. Don’t store potatoes with onions
This tip comes from the cooks over at The Kitchn. Apparently, onions release gas that can speed the spoilage of spuds. Potatoes do best in a cool, dry place away from light, such as a pantry or closet. The fridge is ok, but it can add a sweet flavor to potatoes.

5. Keep celery in water
To keep celery crisp for longer, cut off the bottom and store it upright in a jar or pitcher of water the refrigerator. Keep in mind that limp celery is still great in soup, stuffing or juice.

6. Don’t put asparagus in the fridge
This tip comes from an archive post by Ramon Gonzales. It turns out, asparagus doesn’t need refrigeration. Instead, store it at room temperature. Stand the stalks upright in a glass or bowl of water, loosely arranged. This can keep asparagus for up to a week.

Of course, rot happens. If your produce takes a turn for the moldy, the compost is still a much better option than the trash.

I’ve always had this vague idea that I could eat my way to healthier skin, but I’d never really dug into the details. It makes sense though, right? Pack your diet with nourishing, vitamin-rich foods, and your whole body benefits, including your body’s largest organ.

Rather than keep piling the kale onto my plate and hoping for the best, I thought it was time to research the best foods for healthy skin.

1. Sweet Potatoes

Sweet potatoes are rich in beta carotene, an antioxidant that helps your body repair damaged skin cells. I’m sure you’ve had your sweet potatoes boiled or roasted, but there are other yummy ways to get this skin-smart orange veggie into your diet.

How to eat them: Try baked sweet potato fries, a deeply-seasoned sweet potato soup, or sweet potato brownies (no, really!).

2. Blueberries

Blueberries – and other dark berries – contain high concentrations of antioxidants. Beta carotene (see above) is just one antioxidant that helps protect your skin. On top of the antioxidants, blueberries can help with red, blotchy skin.

How to eat them: Right out of the container! You can also add them to muffins or biscuits. Just beware of blueberry-flavored foods that don’t actually contain any blueberries.

3. Peanuts and Almonds

Peanuts and almonds are both very high in biotin, a nutrient that your body needs to create skin, hair, and nail cells. Biotin is a B vitamin, and a deficiency in this important nutrient can cause skin irritation and rashes.

How to eat them: Peanut or almond butter is obvious, but try using peanut or almond butter to make a delicious, creamy sauce or branching out with a super yummy peanut stew.

4. Flax and Chia Seeds

Studies going as far back as the late 1920s have shown that omega 3 fatty acids help promote healthy skin. These healthy fats help strengthen cell membranes, which protect your skin from harmful toxins. Flax and chia seeds are both great sources of healthy omega 3s.

How to eat them: Serve up homemade flax crackers with hummus for dipping or try some of these yummy flax recipes.

5. Papaya

This tropical fruit is an excellent source of vitamin C, an antioxidant that helps your body repair damaged skin cells. Papaya also has anti-inflammatory compounds that help improve your skin’s appearance.

How to eat it: Cut chunks of papapya into your next fruit salad for dessert, try a savory Thai green papaya salad, or top grilled tofu with homemade papaya salsa.

6. Avocado

Avocados contain those healthy omega 3 fatty acids, and they’re also a great source of vitamin E. Vitamin E helps protect your skin from fine lines and wrinkles. A vitamin E-rich diet also helps you bounce back from sunburn.

How to eat it: Go beyond guacamole! Toss some avocado into a quinoa and kale salad or stuff them into some Super Collard Rolls.

7. Green Tea

Put the kettle on, because green tea is full of skin-rejuvenating polyphenols that can improve your skin’s health and even help protect your body from skin cancer.

How to drink it: Sip a mug of green tea or use it as a base for soups or smoothies.

8. Water

I know, it almost felt like a cop-out including water on this list. But the benefits of hydration are too many to discount. If you don’t like drinking plain old water, don’t worry! Below are some options to spice things up.

How to drink it: Try watermelon coconut water, homemade water kefir, or eat your water!

9. Collard Greens

I wasn’t far off with my plateful of kale plan, but collard greens beat kale in antioxidant counts and anti-inflammatory benefits. You can use collards in place of kale in lots of recipes!

How to eat them: Top your tacos with gingered collard slaw, stuff the leaves with jerk tempeh, or pan fry them with potatoes for a filling supper.

10. Brazil Nuts

The humble Brazil nut is a selenium superstar! Selenium works with vitamin E to protect your skin cells from damaging free radicals.

How to eat them: Sneak them into a flavorful humus recipe, toss them with amaranth and greens, make raw chocolate truffles, or use them to make creamy vegan mac and cheese.

(Leesa recommends that all produce, nuts, teas, etc., be organic!)

6 Morning Habits You Need to Dig Into

Stop snoozing. You and your snooze button have quite the relationship, but it would be better if you got up as soon as your alarm goes off. It may take some serious discipline at first, but the snooze disturbs sleep often enough to make you feel more tired than if you had simply awoken, albeit a little groggy, on time. If you fall back into deep sleep and the snooze interrupts your cycle, you will be worse off. Don’t talk yourself out of it, just get up when your alarm tells you to. If you get really good, try using your internal clock to wake up, not an alarm, for better circadian rhythms.

Wake up early. The early bird gets the worm. There is a reason that sayings like this exist. Rising with the sun encourages creativity, productivity, and motivation. Waking up with a positive view of the quiet world is a gift. Likewise, this means going to bed earlier, as skimping on sleep is not the answer. Waking up with the sun is also great for balancing your hormones, as the sunlight hitting initiates all sorts of hormonal responses –like shutting down sleep-inducing melatonin production — that are essential for internal balance.

Take a deep breath and check in with yourself. The first thing you should do, once you’ve sat up out of bed, is a take a few deep inhalations to check in and ground yourself for the day. Take 10 breaths and clear your mind. Step outside onto your deck if you have one and feel the crisp morning air caress your face. Take your time and enjoy the quietude of morning before you bustle off to work or peruse the internet.

Get some exercise. Whether it’s 15 minutes of yoga/stretching or an hour long jog, working out in the morning has some major perks. It gets your blood flowing and helps you become more awake and energized throughout the day. It also ensures that you fit in some form of physical activity without getting stressed or too busy. Once you’ve exercised, your day will seem to open up with ample energy and less stress.

Drink warm water with lemon before coffee. If the first thing you do when you wake up if brew a pot of joe, try this instead. Not only will it wake you up on a more natural level than caffeine, but it will hydrate your dehydrated body and gently arouse your digestive system. Water in the morning also boasts other benefits, like clearer skin, better weight maintenance, increased nutrient absorption, and balanced lymph.

Eat when you’re hungry. There’s no need to shove breakfast into your mouth the second you awaken. Sure, many seem to say that eating breakfast within an hour of waking is important, but if you aren’t hungry or have a hard time eating that early, don’t sweat it. Your body will tell you when it’s time for food. Let it complete its nighttime clean-up before you overwhelm your digestive system with a hearty meal. Your body WILL survive in the interim.

Not everyone is a morning person. If you are a night owl and regularly stay up well past midnight working or unwinding, then so be it. But for most with traditional 9 to 5 jobs, waking up even an hour earlier could jumpstart their energy and productivity, allowing them to relax and de-stress at night. Seize your day! Utilize the morning hours and feel great all day.
